Spices

  • Spices and herbs are defined as plant derived substances that add flavor to any dish. It is difficult to distinguish between the two. Spices can come from the following plant parts: roots, rhizomes, stems, leaves, bark, flowers, fruits, and seeds. Spices contribute rich flavor to food without adding any calories, fat, sugar or salt. Herbs and spices also add flavors to dishes which, again, increases their complexity but also complements or plays counterpoint to other flavors already present.
  • Spices and herbs such as black pepper, cinnamon, turmeric, and cardamom have been used by Indians for thousands of years for both culinary and health purposes. Spices indigenous to India (such as cardamom and turmeric) were cultivated as early as the 8th century BC in the gardens of Babylon
  • Pepper, turmeric, cardamom, and cumin are some examples of Indian spices. Spices are used in different forms: whole, chopped, ground, roasted, sautéed, fried, and as a topping. They blend food to extract the nutrients and bind them in a palatable form.
